
Now that eating more whole grains is part of my larger quest to know what i eat, i made my first attempt at using spelt flour in a pancake receipe. What can i say - what a delight! Not only did the pancakes seem to carry an almost nutty flavor to them but we felt pretty full very fast. I used organic milk and real sugar. I must say this one is a keeper!
1 cup spelt flour
1/2 tsp baking powder
2 tbsp sugar
1 egg
1 tsp vanilla extract
3/4 cup milk
1 tsp butter
Mix flour, baking powder and sugar together in a bowl. Heat milk and butter in a pan until the butter is melted. Pour this mix in another bowl and add the egg and vanilla extract and beat to a nice smooth texture. Gradually work the liquid mix to your flour, baking powder and sugar until it is all runny with no pockets of un-mixed flour.
Heat your frying pan and reduce it to a low heat before you start pouring in the mix to make the pancakes.
Serves 6-8 pancakes.




Do you know what spelt floor is made of? I ate spelt bread and it seemed so much softer and smoother down the throat than wheat flour?

which are similar to wheat grains…just healthier for a couple of reasons…tastier too.
@Seinlife…funny…my post in the making is about my disaster spelt chapatis which looked like the antitheses of your pancakes…they still tasted good though. Did you really make those pancakes in the pic?
I must say they were delicious! @Gal Africana, yes, the pancakes in the photo are the ones she made. We had them again today, now an official part of our weekly Sat & Sun breakfast.
@mwangi - i have read that spelt flour grinding takes longer, but produces a more powdery type of flour, which might explain why it seemed softer and smoother.
As @Gal africana stated it is ground from spelt grain, a distant relative to wheat. This link expounds a bit on it.

I usually just do them kienyeji style with no recipe…but have linked a recipe on my post, would just use a tad more fluid as spelt tends to absorb more water, and then expect it to be more gummy that normal flour.
mmmm, those pancakes look yum! i am a fan of spelt - people look at me like i’m a martian when i talk about it. just in case you didnt know (now that you’ve got me going on about spelt!), you can also get spelt cereal (e.g. heritage flakes by nature’s path). but seriously, wheat intolerance is on the rise mainly down to our consumerist world that we live in. here’s an article that explains why: http://lifeandhealth.guardian.co.uk/food/story/0,,2273811,00.html
