
1/2 cup cooked quinoa
1/2 cup cooked peas
1/4 cup sliced green onion/scallions
1/4 cup sliced red pepper
1/4 cup sliced green pepper
1/8 cup shredded cilantro
2 cloves garlic
8 small sweet tomatoes
2 tbsp balsamic vinegar
Mix all the above ingredients in a bowl and serve.
Serves about 4.

Dunno how i missed that post - so how veganism going? have you had any cravings for any meats or dairy at all?
I actually thought about it since and I am actually not a vegan because I eat fish. The interesting thing is I can actually easily go without fish and/or meat, I don’t really have cravings for it.
I consume a little too much cheese about once a week ala vegetable pizzas and focacia sandwiches but I also have no strong cheese or milk cravings.
The one thing that I have uber-strong cravings for is starch and so my goal is to eventually eliminate starch cravings from my diet and rebuild my diet from the ground up with the aim of being 100% raw vegan, if it works of course, otherwise I’ll just keep experimenting till I find the best diet for me.
That looks absolutely scrumptious! I Usually make something similar with bulgur…will now try with quinoa.
