1/2 cup cooked quinoa
1/2 cup cooked peas
1/4 cup sliced green onion/scallions
1/4 cup sliced red pepper
1/4 cup sliced green pepper
1/8 cup shredded cilantro
2 cloves garlic
8 small sweet tomatoes
2 tbsp balsamic vinegar

 

Mix all the above ingredients in a bowl and serve.

Now that eating more whole grains is part of my larger quest to know what i eat, i made my first attempt at using spelt flour in a pancake receipe. What can i say - what a delight! Not only did the pancakes seem to carry an almost nutty flavor to them but we felt pretty full very fast. I used organic milk and real sugar. I must say this one is a keeper!

 

1 cup spelt flour
1/2 tsp baking powder
2 tbsp sugar
1 egg
1 tsp vanilla extract
3/4 cup milk
1 tsp butter

 

Mix flour, baking powder and sugar together in a bowl. Heat milk and butter in a pan until the butter is melted. Pour this mix in another bowl and add the egg and vanilla extract and beat to a nice smooth texture. Gradually work the liquid mix to your flour, baking powder and sugar until it is all runny with no pockets of un-mixed flour.
Heat your frying pan and reduce it to a low heat before you start pouring in the mix to make the pancakes.

 
Serves 6-8 pancakes.
